Sometimes you have some veg sitting in the refrigerator and you don’t have a clue what to do with them. I don’t know about you, but a lot of times I buy a carrot for a stir-fry and end up using it for a soup instead. And sometimes I just get totally blank. Well, it was one “blank” day when I had a broccoli and a yellow bell pepper sitting on the kitchen counter and I was in no mood to spend a lot of time cooking it. The Indian inside of me said, Curry! Curry!…So yes I followed me- ha, and that’s when I decided to make this vegan broccoli curry.

I made it like I would normally make any other curry, but let me tell you the combination of the two veg went perfectly together. Broccoli for me is a little boring and I always make sure I add it to an ingredient that can dominate it. Peppers are full of flavors and are extremely aromatic which I love (especially when roasted). So adding them to this dish gave life to the broccoli.
Serving this curry to a warm bowl of rice and you have a lovely meal that can make an amazing winter comfort food.

Ingredients
  • 1 large onions
  • 2 medium sized tomatoes
  • 1tbsp olive oil
  • 1tsp mustard seeds
  • 1tsp turmeric powder
  • 1tsp chilli powder
  • 1 broccolicut into florets
  • 1 yellow pepper
  • handful coriander leaves
Instructions
  1. Heat oil in a pan and add mustard seeds. Once they splutter add onions and fry till golden brown
  2. Next add chopped tomatoes and cook till mushy. Then add the turmeric powder, chilli powder and salt and cook till the flavours of the powders are well infused.
  3. Add the chopped peppers, broccoli and 1/2 cup water and let it simmer for about 3-4 mins or till done.
  4. Garnish with a bit of coriander leaves and serve with a warm bowl of rice.
Recipe Notes

I used yellow peppers with this recipes, as I find they have a sweeter flavor than the red and green ones. But feel free to try it out with the red or the green ones too.
