This recipe includes using ingredients you already have at home and gives you the flavors of a Chinese takeaway. This can be a big hit with the kids and can be given to toddlers that are looking for a variety in their meals. Its got a variety of colors and flavors and also has most of your “essential 5-a-day” veg in it. Little ones often find it interesting to pick out the cut vegetables from the rice and eat them on their own. Isn’t that satisfying?

Only takes you 5 MINUTES to cook! Except for chopping up the veg and cooking your rice.

Oh, and Pro tip – Using leftover rice or rice that has been cooked at least an hour ago will prevent it from getting mashed up when you mix them all together. Great ! Now straight to the recipe…

Ingredients
  • 1cups basmati ricecooked and cooled
  • 2 tbsp olive oilsesame oil preferred
  • 2 cloves garlic
  • 1 carrots
  • 1 bok choyor shredded cabbage
  • 100gms fine beans
  • 100gms sweet corn
  • 1 eggsoptional for veg fried rice
  • 1tbsp black pepper
Instructions
  1. Heat oil in a heavy bottomed pan, and add garlic. Almost immediately add your chopped veg. Garlic tends to get burnt very quickly.
  2. I like my vegetables to have a bit of a crunch, so after a quick stir I would break the eggs in and cook them and add the boiled rice.
  3. Add some salt and pepper to this amd serve.
  4. TIP- The basmati rice and the ground black pepper is what gives this rice a nice aroma. Also adding some green peppers will take this dish up a notch.
