I love pasta for a quick dinner meal. But I am not a big fan of the shop bought sauces. Somehow it never tastes like I want it to be. So I started experimenting with different flavors and ideas to create a one-pot pasta the way I like it. I prefer one-pot recipes as they are easy to make with not too much of a hassle and also I found the flavors infuse better this way
This pasta is packed with veg and is super tasty to eat! This would make a perfect family meal and is toddler approved. Which means, make this for dinner and the entire family can dig in. This colorful pasta can be very tempting for your picky little eaters.
Total time spent to make this dish?? 20 minutes. Easy!
All you need to do is place all your ingredients in a heavy bottomed pan and let it do the work for you 🙂

One pot vegan pasta salad
- 1tbsp olive oil
- 2crushed cloves garlic
- 1 onion
- 2diced medium sized tomatoes
- 300grams pasta
- 4cups water
- 1/2tsp chilli powder
- 2chopped carrots
- handful spinach leaves
- 1/2tsp salt
