When it comes to a salad I always prefer something light. Not a heavy creamy dressing (well not most days) and mostly because my main course is quite filling. This hydrating and low carb salad with fresh flavors is super easy to make. The only bit of work is to cook your corn and cut up your veg. Apart from that it’s just throwing them all together and dressing them up with a final bit of coriander garnish.

This would be a perfect treat when you hit summer, as most of the ingredients used are hydrating – from the cucumbers to the tomatoes. I like to make these when we are going on a picnic with the kids, pop them in little kiddie containers and we’re off! These ingredients stay fresh the whole day and don’t taste like it was done hours ago.

Also, a nice idea to take these to work. If you want to pack this for a more filling lunch at work, you can add this as a filling to a flatbread and drizzle with a little bit of yogurt dressing. Perfect! If you want to go a step further you can also add some cooked chickpeas to it. It will add some much-needed proteins to it

I love sweetcorn for its sweet non-intrusive flavor. Even just some cooked buttered corn as a snack on its own would make my evenings perfect.

The only cooking involved is your corn. I prefer using fresh corn, but if you’d like to use frozen or tinned corn they would work just as well.

Ingredients
  • 2ears corn on the cobhusks removed
  • 1 tomato
  • 1 cucumber
  • 1/4 coriander leaves
  • 1/2 lemon
  • saltto taste
Instructions
  1. Place the corn in boiling water and cook till well done. Cut the corn out once they are warm enough to do so.
  2. Chop your veg and mix them together with corn
  3. Drizzle over the lemon juice and add a pinch of salt to it. Ganish with chopped coriander
Recipe Notes

You can add a tsp of chili powder or pepper to spice this up a bit. I prefer not. It's entirely your choice how you prefer to eat this.

With the tomatoes, I usually remove the pulp otherwise it can get a bit messy. Another alternative would be to use ripe cherry tomatoes. Just halve them and toss them in. I'd say around 4 cherry tomatoes would work well for this recipe
