This leek and potato soup took me well under 20 minutes to create. And best of all its a recipe that kids love. My toddler can finish this in minutes, and this can be eaten as a meal on its own. This is one soup that can be eaten any time of the year, Its clean and healthy and uses fresh ingredients. The kids can hardly tell this creamy meal is actually wholesome milk and veg.

The potato and leek together make this quite a hearty meal, which goes well with breadsticks or topped with croutons or even just a toastie, get creative! And… you get a dose of fiber with this one.

Ingredients
  • 1tbsp olive oil
  • 1whole leekonly need the white part
  • 1large potato
  • 1medium onionI used brown onions
  • 1/2cup milkwhole milk for kids
  • pepperto taste
  • saltto taste
Instructions
  1. In a hot pan drizzle some olive oil, and once its heated add your chopped onions
  2. Cook it till it gets slightly translucent and add your leek and cubed potatoes. I like to sprinkle a few drops of water to allow it to cook. Cover it with a lid and let it simmer for about 5 mins.
  3. Add half a cup of whole milk and give it a quick stir. Let this mixture cool down before you blend it to a smooth creamy consistency.
  4. Top it up with your little one's favourite toppings and its ready to be served warm.
