So I had a bagel just sitting on the kitchen counter just way too long and had some pizza sauce and mozzarella in the fridge from yesterdays pizza night. So what do I do? Yup, you guessed right! A Bagel pizza sandwich, go vegan! Its super simple to make and you can use whatever toppings you have stocked up in your kitchen. My ultimate goal was to get done with the bagel-ha. The kids and I are not a big fan of it, but this recipe changed everything. It was moist and juicy to chew on and the best part is when you fill it up with your “hidden veg”, kids don’t really get to notice it that much, as they enjoy pulling on the cheesy strings of the warm mozzarella.

Warning- I have to admit the pictures in this recipe did turn up a little messy, all thanks to a few little handy helper 🙂

Ingredients
  • 2 bagelssliced
  • 1handful mozzarellagrated
  • 2sprigs coriander leavesbasil does justice. I didn't have any so used coriander
  • 4tbsps pizza sauce
  • 1 tomato
  • 1 onion
  • 1/2 green peppersor mushrooms
  • few spinach leaves
Instructions
  1. Spread the pizza sauce on the sliced bagels. Top it with the mozzarella, basil/coriander, and green peppers.
  2. Place them in the oven for 10 minutes at about 250 degrees or until the cheese seems melted and done.
  3. Take them out of the oven and layer with your favourites. I placed sliced onion rings, tomato slices and a bit of grated carrots in between the bagel and... done!

Get creative and top your bagel with any veg you may opt to have as a pizza topping or just any veg you've got stocked up. Some spinach leaves also make a good filling, why not include some greenery to make this more nutritious?

This is not only a fun treat but a healthy one too. Works well as a kiddie lunch on a lazy Sunday with a nice bowl of a golden fruit salad. That together is one bowl of your veg and one bowl of your fruit. What a perfect way to end the weekend guilt free.
